We started KOTI because we were angry. Angry at fast food masquerading as döner. Angry at shortcuts. Angry at the gap between what street food could be and what it had become.
So we went to Berlin. We ate at every spot we could find. We studied the spits, the bread, the sauces. Then we brought it north — and married it with Nordic obsession for sourcing.
Every ingredient is chosen with violence. Every animal lived well. Every flatbread is baked before your shift. Every sauce is made from scratch.
We don't do frozen. We don't do pre-sliced. We don't do "good enough." Good enough isn't good enough.
